On the day of my child’s dedication, The aroma  from my kitchen made the day more beautiful, the spicy and rich smell of smokey party Jollof rice around the house made my neighbours  start  sniffing and making orders even when the food was not ready.

As i was stirring the rice with a wooden spatula,all the ingredients, the tomatoes, peppers, onions an other ingredients cooked together.

My already spieced, cooked and fried chicken was already on he tray staring at me. adults and children in my house all wanted to have a taste of the party jollof and fried chicken paired with salad.

Here’s what you’ll need to make a  pot of Jollof

Firstly, you need a good cooking pot

For the Tomato Base (Pepper Mix)

  • Fresh Tomatoes-This gives the rice its vibrant color and natural sweetness.
  •  Red bell peppers (tatashe)-This adds sweetness and depth to the sauce.

For the Rice

  •  Vegetable oil (or a mix of oil and butter for richness)- For frying tomato-pepper blend, giving it richness.
  •  Chicken or beef stock – This brings  depth and sweet flavor to the rice.

  • Crayfish – Gives it a unique taste and aroma

Step- By- Step Guide On How To Cook Nigerian Smokey Party Jollof Rice At Home

in a clean pot add your blended fresh mix and cook till the water dries up

 Prepare the Pepper Base

Step 1 – In a clean pot add you blended fresh tomato mix and boil until the water dries up.

Step 2 – In a pot already on a cooker, pour in your vegetable oil.

Step 3 – lightly fry your onion.

Chop-the-Onions-and-Garlic

Step 4 –  Add your boiled-down pepper mix and fry everything together on medium heat, stirring frequently to prevent burning until dry.
